If you remember the Botanical Bucket List I posted at the beginning of the year, you will recall that February’s must-try activity is making an herbal treat or confection. Well. Do I ever have a fantastic round up for you!

As Mary Poppins sings, “A spoonful of sugar helps the medicine go down”- and there are several ways to make otherwise icky herbs taste better. I’ve experimented with herbal electuaries before- an electuary is a paste made from ground herbs and honey- and this is definitely one of the simplest ways to make an herbal treat. Herbal syrups are also easy and well worth learning to make.

But sometimes it’s nice to celebrate the herbs that taste good simply because they taste good. Everyone needs an indulgence now and then! Read on for links to truffles, icecreams, zuccerinni, turkish delight, caramels, marshmallows, and more- flavored with the botanicals we all adore. Because if you’re like me, you want to revel in the flavors, colors and amazing aromas of your favorite plants in every conceivable way. And if you’re going to indulge, you might as well make it at least a *little* healthy for you.

This year, I decided to experiment with hard candy. While I’m putting the finishing touches on that project (which I will unveil Saturday- so stay tuned!), here are some ideas to get your herbal-confectionery creativity flowing!
